Dating back centuries, brining began as a method of preserving meat long before the days of perfectly climate-controlled meat cases. In its simplest form, the salt mixture penetrates the turkey meat, helping it retain moisture while cooking. However, you can also add herbs and spices to the brine help to boost the turkey\u2019s flavor profile.<\/p>\n\n\n\n<p>There are two types of brines: wet and dry. One uses liquid and, you guessed it, the other uses dry ingredients. We\u2019ve broken each brining type down to help you make the best choice for your turkey.<\/p>\n\n\n\n<h2 class=\"wp-block-heading\">Wet Brine<\/h2>\n\n\n\n<p>Making a wet brine at home is easy as 1, 2, 3, using just a few simple ingredients. If using one of these products, consider reducing your brine time. Just make sure to read the label on your turkey or ask your grocery store&#8217;s meat department.<\/em><\/p>\n\n\n\n<h2 class=\"wp-block-heading\">Dry Brine<\/h2>\n\n\n\n<div class=\"wp-block-image\"><figure class=\"alignright size-large is-resized\"><img loading=\"lazy\" decoding=\"async\" src=\"http:\/\/www.eatturkey.org\/wp-content\/uploads\/2020\/07\/BBQinDC_Turkey_Final_2_WRB-968x1024.jpg\" alt=\"brined smoked Turkey Breast sliced on a cutting board\" class=\"wp-image-7800\" width=\"318\" height=\"335\"\/><figcaption>Wolf&#8217;s Revenge Granch Champion Turkey Breast<\/figcaption><\/figure><\/div>\n\n\n\n<p>Dry brining, a.k.a. salting, involves rubbing salt, seasonings and\/or sugar directly onto the meat and skin before letting your turkey rest in the refrigerator. During this process, the salt draws out the juices through osmosis. We\u2019re not scientists, but trust us, it works!<\/p>\n\n\n\n<p>To allow this reaction to work its magic, it\u2019s recommended to allow 24-36 additional hours of brine time if opting to use a dry mixture. The optimum ratio of kosher salt is 1 tablespoon per 5 pounds of turkey.<\/p>\n\n\n\n<p>That said, it\u2019s incredibly simple \u2013 just combine the salt and spices and rub the mixture into the meat, cavity and skin. <em>Voila!<\/em> Cover the turkey, place it in the refrigerator and let the spices do their thing until it\u2019s time to cook.<\/p>\n\n\n\n<p>If you\u2019re up to the task, here are some dry turkey brine recipes worth a try:<\/p>\n\n\n\n<ul class=\"wp-block-list\"><li><a href=\"https:\/\/www.simplyrecipes.com\/recipes\/how_to_dry_brine_and_roast_a_turkey\/\" target=\"_blank\" rel=\"noreferrer noopener\">Basic Dry Brined Turkey by Simply Recipes<\/a><\/li><li><a href=\"https:\/\/www.eatturkey.org\/recipe\/dry-rubbed-bbq-turkey-breast-with-pico-de-gallo-2\/\">Dry Rubbed BBQ Turkey Breast<\/a><\/li><li><a href=\"https:\/\/turkeysmoke.org\/recipes\/wolfs-revenge-grand-champion-turkey-breast\/\" target=\"_blank\" rel=\"noreferrer noopener\">Wolf\u2019s Revenge Grand Champion Turkey Breast<\/a><\/li><\/ul>\n\n\n\n<h2 class=\"wp-block-heading\">Additional Brining Tips<\/h2>\n\n\n\n<p>When wet brining your turkey, the only other essential is a large container for submerging the turkey that can fit in the refrigerator or stay iced down. We recommend a food-safe bucket, Cambro container with a lid, large stockpot or a sealable brine bag. Make sure your brining container is large enough for your cut of turkey and the liquid. Table salt will result in a bird that\u2019s too salty.<\/p>\n\n\n\n<p>Food safety is key, so keep your turkey chilled throughout the brining process. Brining time will vary based on the brine and size of the turkey.<\/p>\n\n\n\n<p>Don\u2019t wash your turkey after brining. <a href=\"https:\/\/www.eatturkey.org\/2019\/08\/26\/to-wash-or-not-to-wash\/\">Washing raw poultry<\/a> increases the risk of spreading harmful bacteria around your kitchen.&nbsp; If necessary, pat the turkey with a wet paper towel to remove excess salt.<\/p>\n\n\n\n<p>Do wash your hands and sanitize surfaces after <a href=\"https:\/\/www.eatturkey.org\/turkey-food-safety\/\">handling raw turkey<\/a>.<\/p>\n\n\n\n<p>Once finished, discard the brine.<\/p>\n\n\n\n<p>Now that you have the knowledge to brine, it\u2019s up to you to wield this new power wisely.
